Regardless, it\u2019s getting it \u2013 or rather Amazonian cocoa is \u2013 in the form of potential health benefits.<\/p>\n<h2>Amazonian cocoa<\/h2>\n<p>New <a href=\"https:\/\/www.nature.com\/articles\/s41598-025-27795-z\" target=\"_blank\" rel title=\"https:\/\/www.nature.com\/articles\/s41598-025-27795-z\">research<\/a> out of S\u00e3o Paulo State University (UNESP) has found that post-harvest methods, especially fermentation, can not only enhance the flavour, but also the nutritional content of Amazonian cocoa. <\/p>\n<p>\u201cUnlike soybeans, corn, and wheat, which are priced by volume, cocoa is one of the few agricultural products where quality is much more significant in determining price,\u201d says Renato de Mello Prado, a professor at the Faculty of Agricultural and Veterinary Sciences (FCAV) at UNESP\u2019s Jaboticabal campus. \u201cIn this study, we saw that Amazonian cocoa has the potential to excel in both areas. That\u2019s why we selected the best cultivar and post-harvest practices to achieve nutritional and flavour quality.\u201d <\/p>\n<p>Funded by the S\u00e3o Paulo Research Foundation, the study took place at the Frederico Afonso Experimental Station, part of the Executive Committee of the Cocoa Farming Plan in Rond\u00f4nia, Brazil. (Image: Getty\/fcafotodigital)<\/span><\/figcaption><\/figure>\n<h2>Fermentation and nutrition<\/h2>\n<p>\u201cFermentation is an important process in chocolate production,\u201d says Edilaine Ist\u00e9fani Franklin Traspadini, a postdoctoral fellow. \u201cWithout it, the cocoa bean doesn\u2019t develop the colour and aroma we know, but there\u2019s a significant nutritional cost to this process.\u201d<\/p>\n<p>The process of fermentation lowers phenolic compounds and anthocyanins, both known for their antioxidant properties. However, it also boosts amino acids, increases antioxidant enzyme activity, and raises levels of minerals such as potassium and magnesium.<\/p>\n<p>In contrast, unfermented cocoa retains more phosphorus and calcium, minerals that support bone strength and cardiovascular health.<\/p>\n<p>It\u2019s this nutritional cost that\u2019s led them to suggest the creation of blends that combine fermented and unfermented beans as a strategy to balance flavour and nutritional value.<\/p>\n<p>\u201cWe advocate for a combination of a fermented base to provide the brown colour and velvety texture, while a percentage of unfermented beans would act as a boost of antioxidants and minerals, creating a balance between flavour and health,\u201d says Traspadini.<\/p>\n<h2>Cocoa discoveries<\/h2>\n<p>The researchers identified glycine betaine and proline in cocoa beans. These compounds help protect plants from oxidative stress and may also act as strong antioxidants in the human body. <\/p>\n<p>\u201cThey function as true cellular protectors, which could transform Amazonian cocoa into a superfood,\u201d says Prado.<\/p>\n<p>It\u2019s important to note there\u2019s a strong possibility that cocoa across all growing regions has this potential, it just hasn\u2019t been tested yet.<\/p>\n<h2>Opportunities for industry<\/h2>\n<p>For food and drink makers, the findings offer a fresh way of thinking about cocoa, though it\u2019s not revolutionary.<\/p>\n<p>Cocoa was already known to have its antioxidant health benefits \u2013 what\u2019s new here is the idea that post-harvest processing can fine-tune them. <\/p>\n<p>By playing with fermentation or blending different types of beans, manufacturers could nudge cocoa products in a more nutritional direction without sacrificing the flavour consumers expect.
