{"id":895167,"date":"2026-03-28T06:32:36","date_gmt":"2026-03-28T11:32:36","guid":{"rendered":"https:\/\/newsycanuse.com\/index.php\/2026\/03\/28\/the-humble-superfood-hiding-in-your-pantry-and-the-simple-recipes-to-cook-it\/"},"modified":"2026-03-28T06:32:36","modified_gmt":"2026-03-28T11:32:36","slug":"the-humble-superfood-hiding-in-your-pantry-and-the-simple-recipes-to-cook-it","status":"publish","type":"post","link":"https:\/\/newsycanuse.com\/index.php\/2026\/03\/28\/the-humble-superfood-hiding-in-your-pantry-and-the-simple-recipes-to-cook-it\/","title":{"rendered":"The humble superfood hiding in your pantry and the simple recipes to cook it"},"content":{"rendered":"<p>Recipes <\/p>\n<div id=\"ArticleContent\">\n<p>High in fibre and full of nutrients, pulses are being hailed as a modern superfood by experts around the globe, but what are they and why should you include them in your daily diet?<\/p>\n<p>Sarah Di Lorenzo joined Sunrise on Tuesday to answer all these questions and share some great recipe tips for these complex superfoods.<\/p>\n<figure><picture><source data-ratio=\"16:9\" media=\"(min-width: 0px)\"  ><img decoding=\"async\" title=\"recipes\" src=\"https:\/\/images.7news.com.au\/publication\/C-21586539\/1799d639c918b9343a544423fdfd057385e1216e.png?imwidth=650&#038;impolicy=sevennews_v2\" alt=\"recipes The humble superfood hiding in your pantry and the simple recipes to cook it.\"><\/picture><figcaption><span><span>The humble superfood hiding in your pantry and the simple recipes to cook it.<\/span><span> Credit: Sunrise<\/span><\/span><\/figcaption><\/figure>\n<p><span>Know the news with the 7NEWS app: <a href=\"https:\/\/7news.com.au\/app?utm_source=7NEWS&#038;utm_medium=contextual-link-app&#038;utm_campaign=7news-app\" target=\"_blank\">Download today <svg viewBox=\"0 0 20 14\" width=\"20\" height=\"14\" role=\"img\" aria-label=\"Arrow\"><title>Arrow<\/title><path d=\"M1 7H19M19 7L13 1M19 7L13 13\" stroke=\"currentColor\" stroke-width=\"1.5\" stroke-linecap=\"round\" stroke-linejoin=\"round\" fill=\"none\" \/><\/svg><\/a><\/span><\/p>\n<h2>Recipes Lentil Salad<\/h2>\n<p>(serves &#8211; 4 as a side, 2\u20133 as a main)<\/p>\n<h2>Recipes Ingredients <\/h2>\n<p><strong>Salad<\/strong><\/p>\n<ul>\n<li>2 cups cooked green lentils (about 1 cup dry, you can also use canned)<\/li>\n<li>\u00bd cup diced cucumber<\/li>\n<li>\u00bd cup quartered cherry tomatoes<\/li>\n<li>\u00bc cup sliced pitted Kalamata olives<\/li>\n<li>\u00bc cup chopped spring onions<\/li>\n<li>2 tbsp minced fresh dill<\/li>\n<li>2 tbsp minced fresh parsley<\/li>\n<li>\u2153 cup crumbled feta<\/li>\n<\/ul>\n<p><strong>Dressing<\/strong><\/p>\n<ul>\n<li>2 tbsp apple cider vinegar<\/li>\n<li>2 tbsp Dijon mustard<\/li>\n<li>2 tbsp fresh lemon juice<\/li>\n<li>1 tbsp honey (or maple syrup)<\/li>\n<li>\u00bc cup extra\u2011virgin olive oil<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>\u00bc tsp ground black pepper<\/li>\n<\/ul>\n<h2>Recipes Method <\/h2>\n<ul>\n<li>Cook lentils (if not using canned)<\/li>\n<li>Rinse lentils, then cook according to packet directions until just tender, not mushy.<\/li>\n<li>Drain well and let them cool completely.<\/li>\n<\/ul>\n<p><strong>Assemble salad<\/strong><\/p>\n<ul>\n<li>In a medium\u2013large bowl, combine cooled lentils, cucumber, tomatoes, olives, spring onions, dill, parsley and feta.<\/li>\n<\/ul>\n<p><strong>Make dressing<\/strong><\/p>\n<ul>\n<li>In a small bowl or jar, whisk or shake together vinegar, Dijon, lemon juice, honey, olive oil, salt and pepper until emulsified.<\/li>\n<\/ul>\n<p><strong>Dress and serve<\/strong><\/p>\n<ul>\n<li>Pour dressing over the salad and toss to coat evenly.<\/li>\n<li>Taste and adjust seasoning; add extra herbs on top if you like.<\/li>\n<li>Serve chilled or at room temperature.<\/li>\n<\/ul>\n<h2>Recipes Chickpea Curry<\/h2>\n<p>Serves 6<\/p>\n<h2>Recipes Ingredients <\/h2>\n<ul>\n<li>2 tbsp coconut oil<\/li>\n<li>1 onion, finely chopped<\/li>\n<li>3 cloves garlic, finely chopped or crushed<\/li>\n<li>2 tbsp curry powder<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1 \u00d7 400 g can crushed tomatoes<\/li>\n<li>1 \u00d7 400 ml can coconut milk<\/li>\n<li>2 \u00d7 400 g cans chickpeas, drained and rinsed<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><strong>To serve<\/strong><\/p>\n<ul>\n<li>Fresh coriander (cilantro), chopped<\/li>\n<li>Lime wedges<\/li>\n<li>Brown rice or cauliflower rice<\/li>\n<\/ul>\n<h2>Recipes Method <\/h2>\n<ul>\n<li>Heat the coconut oil in a large pot over medium heat. Add the onion and garlic and cook, stirring, for 5\u20137 minutes until the onion is soft and translucent.<\/li>\n<li>Add the curry powder and cumin.
