Cook until charred on the bottom, about 6 minutes, then flip. Cook until the other side is charred and the artichokes are crispy, another 6 minutes or so. Stir in the kale to wilt, then add the almonds, apricots, prunes, cranberries, currants, olive oil, Dijon and vinegar. Stir until everything is well combined. Crumble the feta over the top and fold in.
