{"id":869281,"date":"2025-08-31T00:12:12","date_gmt":"2025-08-31T05:12:12","guid":{"rendered":"https:\/\/newsycanuse.com\/index.php\/2025\/08\/31\/avocado-toast-with-beetroot-hummus\/"},"modified":"2025-08-31T00:12:12","modified_gmt":"2025-08-31T05:12:12","slug":"avocado-toast-with-beetroot-hummus","status":"publish","type":"post","link":"https:\/\/newsycanuse.com\/index.php\/2025\/08\/31\/avocado-toast-with-beetroot-hummus\/","title":{"rendered":"Avocado Toast with Beetroot Hummus"},"content":{"rendered":"<div>\n<div id=\"recipe-details\">\n<div>\n<h3>Avocado Toast with Beetroot Hummus<\/h3>\n<p>By: Lisa Guy<\/p>\n<p>Creamy avocado meets vibrant beetroot hummus in this nourishing toast recipe \u2014 perfect for breakfast, lunch or a healthy snack.<\/p>\n<\/p><\/div>\n<hr>\n<hr>\n<div>\n<h3>Ingredients<\/h3>\n<ul>\n<li> 1 medium beetroot<\/li>\n<li> 2 cloves garlic<\/li>\n<li> 400g tin chickpeas, drained<\/li>\n<li> 2 heaped tbsp tahini<\/li>\n<li> \u00bc cup extra-virgin olive oil<\/li>\n<li> Juice 1 medium lemon<\/li>\n<li> Sea salt &#038; pepper, to taste<\/li>\n<li> 2 slices grainy toast or sourdough<\/li>\n<li> 1 medium avocado, sliced<\/li>\n<li> Squeeze of lemon juice<\/li>\n<li> Small handful coriander, roughly chopped<\/li>\n<li> Black pepper<\/li>\n<li> Optional toppings<\/li>\n<li> Crumbled feta<\/li>\n<li> Nuts &#038; seeds (chia, sunflower seeds, walnuts, black sesame seeds, dukkha)<\/li>\n<li> Cherry tomatoes<\/li>\n<\/ul><\/div>\n<hr>\n<div>\n<h3>Method<\/h3>\n<p><\/p>\n<ul>\n<li> Preheat the oven to 200\u00b0C. Wrap the beetroot and garlic cloves in aluminium foil and roast for about 40 mins or until tender.<\/li>\n<li> Allow the beetroot to cool, then peel and chop.<\/li>\n<li> In a food processor, combine the roasted beetroot, garlic, chickpeas, tahini, olive oil, lemon juice, sea salt and pepper. Blend until smooth and well combined, adjusting seasoning to taste. Transfer to an airtight container and store in the fridge.<\/li>\n<li> To make the avocado and beetroot hummus toast, spread a generous layer of beetroot hummus on each slice of toast.
