I love them,\u201d she says. \u201cPeople have this idea that they\u2019re really really difficult, and I think they\u2019re actually one of the easier things to make.\u201d<\/p>\n<p>Enter: Ptak\u2019s Brown Butter Chocolate Souffl\u00e9. As she developed this dessert for our April issue, she was inspired by the flourless chocolate cakes often made for Passover. This recipe is made without wheat or flour, but instead of being dense, it\u2019s light as air. Ptak\u2019s souffl\u00e9 uses bittersweet chocolate and Dutch-process cocoa to build a robust, chocolaty base. Brown butter offers a complementary nutty, caramelized flavor. And the addition of dark rum supercharges everything.<\/p>\n<p>If you\u2019re still seeking some souffl\u00e9 confidence, Ptak has a few tricks. Buttering the baking dish is integral to getting the highest rise. You\u2019ll brown a whole stick of butter, then brush that up the inside edges of the dish, as well as along the rim, encouraging a handsomely tall souffl\u00e9. \u201cThe butter kind of trains the mixture where to go, and helps it rise straight up,\u201d Ptak explains.\u00a0<\/p>\n<p>Timing, she says, is also key. No one wants to be stuck in the kitchen, away from their friends, while they work on dessert. Luckily, a souffl\u00e9 comes together quickly. Ptak\u2019s advice is to plan ahead\u2014the chocolate mixture can be prepped and kept in a warm area, and egg whites can be separated and held at room temperature too. This way all you have left is beating those egg whites (unless you, like me, foist that part onto a younger cousin), and throwing\u00a0the whole thing into the oven.\u00a0<\/p>\n<p>In souffl\u00e9s, egg whites work as the sole leavening agent. \u201cIt&#8217;s all about the aeration,\u201d Ptak says. The tiny air bubbles that are beaten into the whites expand in the hot oven, and those enlarged air bubbles are what give a souffl\u00e9 its bouncy, plush structure. That said, it\u2019s important to get those beaten egg whites to the right consistency: \u201cYou want to whip them so that they hold these peaks, but you don&#8217;t want them to be so stiff that it&#8217;s too difficult to fold them into the custard,\u201d Ptak says.\u00a0<\/p>\n<p>But most important of all? A cool head. Trust the process, and remember: Eat it right away. As soon as it\u2019s out of the oven, serve warm with <a href=\"https:\/\/www.bonappetit.com\/story\/best-vanilla-ice-cream\" target=\"_blank\" rel=\"noopener\">a scoop of\u00a0ice cream<\/a>\u2014or cr\u00e8me anglaise, or whipped cream, or straight-up cream\u2014and sit back while compliments roll in.\u00a0<\/p>\n<p>\u201cIt\u2019s so light and airy,\u201d they might rave. \u201cIts profound chocolate flavor is enhanced by the aromatic brown butter,\u201d one particularly effusive guest may exclaim.
