We asked Test Kitchen pro Josh Rink to explain.<\/h2>\n<\/p>\n<div>\n<p dir=\"ltr\">You can find macarons everywhere from an upscale bakery to the <a href=\"https:\/\/www.tasteofhome.com\/collection\/best-frozen-foods-you-need-from-trader-joes\/\" data-name=\"www.tasteofhome.com\/collection\/best-frozen-foods-you-need-from-trader-joes\/\" data-module=\"content engagement\" data-position=\"embedded links\" rel=\"noopener noreferrer\">freezer aisle at Trader Joe\u2019s<\/a>. There may be no other treat that comes in as many flavors, from vanilla and raspberry to orange blossom and mojito. These Oreo-sized treats cost three times as much as anything else at the bakery.<\/p>\n<p dir=\"ltr\">Why are <a href=\"https:\/\/www.tasteofhome.com\/article\/how-to-make-macarons\/\" data-name=\"www.tasteofhome.com\/article\/how-to-make-macarons\/\" data-module=\"content engagement\" data-position=\"embedded links\">macarons<\/a> so expensive? Here\u2019s what you\u2019re getting for your money.<\/p>\n<h2>Macaron Ingredients Are Expensive<\/h2>\n<p dir=\"ltr\">Unlike most bakery treats, macarons are not made with all-purpose wheat flour, which even a home cook can pick up at the supermarket for less than 50 cents a pound. Instead, they\u2019re made with almond flour, which costs more than nine times as much\u2014and that\u2019s at Costco.<\/p>\n<p dir=\"ltr\">\u201cFinely ground almond flour gives structure, texture and mild flavor to macaron shells,\u201d says <em>Taste of Home<\/em> food stylist <a href=\"https:\/\/www.tasteofhome.com\/article\/frosting-vs-icing-whats-the-difference\/#:~:text=says%20Taste%20of%20Home%20Food%20Stylist%20Josh%20Rink%2C%20a%20cake%2D%20and%20cookie%2Ddecorating%20expert.\" data-name=\"www.tasteofhome.com\/article\/frosting-vs-icing-whats-the-difference\/#:~:text=says%20Taste%20of%20Home%20Food%20Stylist%20Josh%20Rink%2C%20a%20cake%2D%20and%20cookie%2Ddecorating%20expert.\" data-module=\"content engagement\" data-position=\"embedded links\" rel=\"noopener noreferrer\">Josh Rink<\/a>. \u201cMacarons are <a href=\"https:\/\/www.google.com\/search?q=merangue+site%3Atasteofhome.com&#038;oq=merangue+site%3Atasteofhome.com&#038;aqs=chrome..69i57.5463j0j7&#038;sourceid=chrome&#038;ie=UTF-8#ip=1:~:text=How%20to%20Make%20Meringue%20%2D%20Taste,www.tasteofhome.com%20%E2%80%BA%20...%20%E2%80%BA%20Baking\" data-name=\"www.google.com\/search?q=merangue+site%3Atasteofhome.com&#038;oq=merangue+site%3Atasteofhome.com&#038;aqs=chrome..69i57.5463j0j7&#038;sourceid=chrome&#038;ie=UTF-8#ip=1:~:text=How%20to%20Make%20Meringue%20%2D%20Taste,www.tasteofhome.com%20%E2%80%BA%20...%20%E2%80%BA%20Baking\" data-module=\"content engagement\" data-position=\"embedded links\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">meringue<\/a>-based confections.\u201d<\/p>\n<p dir=\"ltr\">\u201cThey\u2019re prized for their combination of textures: lightly crunchy exterior, chewy center and creamy filling,\u201d Josh adds. Trying to make them with a less-expensive ingredient like all-purpose flour would change the texture. The result would not be a true macaron.<\/p>\n<p dir=\"ltr\">Here\u2019s the difference between <a href=\"https:\/\/www.tasteofhome.com\/article\/macarons-vs-macaroons-which-cookie-is-which\/\" data-name=\"www.tasteofhome.com\/article\/macarons-vs-macaroons-which-cookie-is-which\/\" data-module=\"content engagement\" data-position=\"embedded links\" rel=\"noopener noreferrer\">macaroons vs. macarons<\/a>.<\/p>\n<h2>Making Macarons Takes Time and Patience<\/h2>\n<p dir=\"ltr\">You could make 10 other types of cookies in the time it takes to make macarons. OK, maybe we\u2019re exaggerating a bit. But here\u2019s the deal.<\/p>\n<p dir=\"ltr\">\u201cMacarons are certainly more \u2018hands-on\u2019 than traditional <a href=\"https:\/\/www.tasteofhome.com\/article\/perfect-chocolate-chip-cookies\/\" data-name=\"www.tasteofhome.com\/article\/perfect-chocolate-chip-cookies\/\" data-module=\"content engagement\" data-position=\"embedded links\">chocolate chip cookies<\/a> and have a number of steps\u2014like sifting, whipping, folding and piping,\u201d Josh says.<\/p>\n<p dir=\"ltr\">After making the batter, the baker transfers it into a piping bag. If you\u2019ve ever piped frosting, you know <a href=\"https:\/\/www.tasteofhome.com\/article\/how-to-use-a-piping-bag\/\" data-name=\"www.tasteofhome.com\/article\/how-to-use-a-piping-bag\/\" data-module=\"content engagement\" data-position=\"embedded links\">using a piping bag<\/a> takes a while to get the hang of everything from filling it without air bubbles to squeezing it with just the right amount of pressure.<\/p>\n<p dir=\"ltr\">The process takes a lot more skill than using a cookie dough scoop. You have to hold the piping bag above the parchment paper at the correct height, squeeze out the right amount of batter, stop squeezing the bag, then twist and lift it to make each macaron shell the right thickness.<\/p>\n<p dir=\"ltr\">After tapping out or popping any air bubbles, the macaron shells have to sit at room temperature until they form a skin. Then they get baked and completely cooled. After baking, the shells have to be paired to match each other in size as closely as possible.<\/p>\n<p dir=\"ltr\">Even after all the components are made, they still have to be filled and assembled!<\/p>\n<p dir=\"ltr\">Half of each pair then gets flipped upside down to be filled\u2014which requires another round of piping. You need just the right amount of filling, the thickness of one shell.
