HONEY BACON BREAKFAST MEDLEY
Ingredients
• 6 slices bacon
• 1 cup chopped broccoli florets
• 1 small red sweet pepper, thinly sliced
• ½ cup sliced fresh mushrooms
• ½ small onion, sliced
• ½ tsp ground black pepper
• 1 tbsp honey
Method
Place the bacon in a skillet over medium-high heat. Let cook until desired crispness and set aside.
In the same skillet add the sliced onions to the bacon fat. Add the sweet pepper and mushrooms. Let the vegetables cook for 2 minutes.
Add the broccoli and the black pepper. Cook for a few more minutes just until the broccoli is crisp tender.
Return the bacon to the skillet and toss with the vegetables. Add the honey and mix just to coat the bacon and vegetables.
Remove from the skillet and serve hot with scrambled eggs.
CRISPY SHRIMP with HONEY DRIZZLE
Ingredients
• 12 – 15 extra large shrimp, peeled and deveined
• Salt and black pepper
• ½ tsp pepper sauce
• Few dashes of Worcestershire sauce
• Juice of 1 large lime
• 1½ cups Panko breadcrumbs
• 1 tsp paprika
• 2 eggs lightly beaten
• 1 cup flour
• Oil for frying
• ½ cup Herbwai Honey
• ½ tsp ginger powder
• ½ tsp red pepper flakes
• 1 tsp finely chopped chadon beni
Method
Place the shrimp in a bowl. Season with a little salt, black pepper, Worcestershire sauce and pepper sauce. Let marinate for half hour. Just before breading squeeze the lime juice over the shrimp.
Combine the honey, ginger, red pepper flakes and chadon beni in a bowl. Add a little salt and black pepper. Mix well and set aside.
Set up a breading station. Place the flour, eggs and panko breadcrumbs in separate bowls. Season the flour with salt and black pepper. Add a touch of pepper sauce to the eggs and mix well. Add the paprika and a little salt and pepper to the breadcrumbs and mix well.
In batches coat the shrimp first in the flour, then egg and then the breadcrumbs, ensuring the shrimp is completely coated at each stage.
Add enough oil in a frying pan to cover and rise about ½ inch in the pan. Heat over medium high heat.
Fry the shrimp in the hot oil in small batches, turning intermittently until golden brown and cooked through.(Approximately 1½ minutes on either side). Place on a plate lined with paper towels to drain excess oil.
Place the shrimp in a serving bowl while warm. Drizzle generously with the honey glaze and serve.
Honey Baked Chinese Chicken
Ingredients
• 1 cup of honey
• 2 tablespoons of rice wine vinegar
• 4 tablespoons of soy sauce
• 2 tablespoons of sesame oil
• 5-6 cloves of garlic, crushed
• 3 tablespoons of finely grated ginger
• Salt and black pepper
• 1 tablespoon of ‘Trini’ green seasoning
• 8-10 pieces of bone-in chicken pieces
Method
Season chicken with salt, pepper and green seasoning in a large bowl.
In another bowl mix together, honey, vinegar, soy sauce, sesame oil, garlic and ginger. Add ½ honey mixture to seasoned chicken, toss to properly coat chicken pieces. Cover and refrigerate overnight.
Pre-heat oven. Place chicken in a greased baking dish. Bake chicken until well browned for about 35-40 minutes. Baste with the remaining honey mixture every 10-12 minutes.
Serve chicken, drizzled with pan juices.
HONEY & BALSAMIC DRESSING
Ingredients
• ½ cup honey
• 3 blades chadon beni, finely chopped
• 1 clove garlic, grated
• 1½ tbsp balsamic vinegar
• Salt and black pepper
• ½ tsp pepper sauce (optional)
Method
Whisk together all the ingredients in a bowl. Taste and adjust seasoning if necessary.
Drizzle over salad and enjoy.
